The rustic Mill Restaurant, located on the grounds of Estate Tuscany, is a semi-indoor space and is suitable for use all year round. An exciting modern menu caters for a range of tastes for breakfast or dinner.

The finest local produce is sourced daily, including herbs, spices and edible flowers to create delicate mouth-watering flavours in every dish.

The Hunter Valley is one of Australia‘s best known premium wine districts playing a pivotal role in the history of the Australian wine industry as one of the first wine regions planted in the early 19th century.

Hunter Valley Semillon is widely considered the iconic wine of the region, but the Hunter produces wine from a variety of grapes including Shiraz, Chardonnay, Cabernet Sauvignon and Verdelho.

Our philosophy is when in the Hunter, drink Hunter Valley produced wine. We want to highlight the families and local grape producers who have shaped the Hunter Valley wine country that exists today.

Château Pâto

Established in 1980, Château Pâto, now led by Nick Patterson, has been quietly creating unique and elegant Hunter Valley Wines. Nestled deep within the heart of Pokolbin, the lion’s share of plantings is Shiraz (the first plantings), with smaller blocks of Chardonnay, Marsanne and Roussanne. 

As all great wine makers believe, good wine is made in the vineyard. Nick’s late father David Paterson, encouraged his approach to wine in a holistic manner, firmly believing that the vineyard’s environment was the starting point of any great wine.

12 years ago, a client of Estate Tuscany, Paul Sampson bought a bottle to introduce us to Château Pâto and today we have created a museum list; a tribute and appreciation to the Patterson family and the quality wine they create.
